What's up Wednesday--zucchini quesadillas

So as I have mentioned before I love zucchini, and we planted a whole bunch in our garden this year.  We have been getting 1-2 each day, and I am loving it!  This recipe is probably my whole family's favorite way to have zucchini--we each have different zucchini recipes which are our favorites, but we all agree on loving this one.  We have it about once a week during high zucchini season.  I found this several years ago in a Family Fun magazine and have made some changes so it is perfect for our family.  We dip these in sour cream and salsa.  The spices can be adjusted to your liking.  They are pretty mild made this way.  Enjoy!

Zucchini Quesadillas

1 can corn, drained
1 can black beans, drained and rinsed
1 can grated zucchini, squeezed dry
1 tsp salt
1/4 tsp pepper
1/2 tsp chili powder
3 cups cheddar cheese, grated
1 (12.5 oz) can chicken, shredded
Tortillas

Mix everything up together in a large bowl but tortillas.  Put 1/3 cup on each half of a tortilla and fold over.  Cook each side on a skillet or pan over medium high heat until crisp and lightly brown turning to get both sides.  Serve with salsa and sour cream.
