I have had this recipe since 1998 from Eagle Brand. It is one of my favorite to make around Christmas. It uses a can of whole berry cranberry sauce, and this year I had made my own cranberry sauce and used that, so I think it was extra good.
Merry Berry Cheese Bars
2 cups flour
1 1/2 cups oats
3/4 cup plus 1 tablespoon firmly packed brown sugar
1 cup butter, softened
1 (8oz) package cream cheese, softened
1 (14 oz) can sweetened condensed milk
1/4 cup lemon juice
1 (16 oz) can whole berry cranberry sauce
2 tablespoons cornstarch
Preheat oven to 350. In a mixer beat flour, oats, 3/4 cup brown sugar and butter until crumbly. Set aside 1 1/2 cups mixture. Press remaining mixture onto bottom of greased 13x9 baking pan. Bake for 15 minutes or until lightly brown.
In a mixer beat cream cheese until fluffy. Gradually beat in sweetened condensed milk until smooth. Stir in lemon juice and spread over baked crust.
Combine cranberry sauce, corn starch and remaining 1 tablespoon sugar. Spoon over cheese layer. Top with reserved crumb mixture.
Bake 45 minutes or until golden. Cool and cut. Store leftovers in refrigerator.
